These are absolutely fabulous!

Mud Hen Brownies

For the brownies…

1 brownie mix, for 9-inch pan

1/2 cup mini marshmallows

1/2 cup chopped pecans

1/2 cup semi-sweet chocolate chips

For the meringue…

2 large egg whites

1 cup light brown sugar

Start by preheating your oven to 350 degrees F. Line a 9-inch square baking pan with aluminum foil and spray with non-stick cooking spray containing flour.

Prepare the brownie mix according to package directions. If using a regular size, large size brownie mix, make and only use half of the batter.

Pour into prepared baking pan and smooth out the top.

Sprinkle the marshmallows, chopped pecans and semi-sweet chocolate chips evenly over the top.

Beat the large egg whites until stiff peaks form. Gently fold in the light brown sugar.

Pour this mixture over the brownies and spread evenly.

Bake in preheated oven for 40 minutes.

Remove and allow to cool before cutting.
