Parmesan Whole Roasted Cauliflower

I have struggled with eating vegetables for a majority of my life. However, a few years ago I discovered roasted vegetables and yes, since then I have been getting a lot more vegetables in my diet. You can literally take any vegetable at all and roast it in the oven. Doing so allows the vegetables to become tender and release their inner sweetness. Drizzle any vegetable with olive oil and then sprinkle with salt and pepper. Roast in a 425 degree oven anywhere from 15-30 minutes, depending on the size of the vegetable and how done you like it. The whole head of cauliflower that I am sharing here, takes about 70 minutes but if you like your vegetables super tender, than I would roast for another 30-40 minutes longer. 

The recipe I am sharing here with you today may sound a little daunting, just the simple fact of roasting a whole head of cauliflower may produce from stress, but fear not because this recipe could not be easier. Do be sure to cover your baking pan with aluminum foil or parchment paper. This will save you so much time in the clean up process! This is perfect served as an appetizer but even better served whole, family style, at meal time. Try this recipe and as alway s, let me know your thoughts! 

Parmesan Whole Roasted Cauliflower

1 head of cauliflower
3 tablespoons olive oil
2 tablespoons spicy yellow mustard
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon grated Parmesan cheese

Start by preheating your oven to 425 degrees F.

Line a baking sheet with aluminum foil.

Prep the cauliflower by removing the bottom leaves and stems. Cut the bottom part of the cauliflower off so that it’s “flat” on the bottom – that way it will set firmly on the baking sheet.

In a medium sized bowl, mix together the olive oil, spicy yellow mustard, salt and black pepper.

Brush this mixture evenly all over the head of cauliflower.

Place in preheated oven for 60 – 70 minutes.

Once removed from the oven, sprinkle the grated Parmesan cheese evenly all over the head and serve hot.

This is delicious cut into wedges, squeezed with lemon and eaten hot.

  1. Thank you so much for adding some veggies to your site. I know many of us are sugar addicts, and chocoholics, but we also have to cook meats, veggies and fruits, and hopefully in larger quantities than sweets. I have also made cauliflower “steaks” like this, only cut top to bottom in 1inch “slabs. That way each person gets more of the crisp, parm surface.
