Roasted Brussels Sprouts

I love this roasted vegetable!

Roasted Brussels Sprouts

2 pounds Brussels sprouts
4 tablespoons olive oil
2 teaspoons salt
1 teaspoon black pepper

Start by preheating your oven to 400 degrees F. Spray a baking sheet with non-stick cooking spray.

Prepare the Brussels sprouts by chopping off the core ends, then cutting in half.

Spread onto prepared baking sheet.

Drizzle with olive oil, salt and black pepper.

Toss together with clean hands.

Roast in preheated oven for 30 minutes.

Remove and drizzle with balsamic vinegar and Parmesan cheese if desired. Can also toss in some cooked bacon for extra flavor.
