The Best Buffalo Chicken Dip

I am fascinated with how different posts on social media go viral and the story behind the recipe I am sharing today falls into that category. Several years ago, a college student named Jordan shared his recipe for Buffalo chicken dip. Millions of hits and re-shares later, he had gone viral. His other posts about his farm work, dogs and his day job of being a sales representative, did not take off like his recipe did. Why? Just so happened that his post was liked and shared with the right people and the right audience. Think of it as capturing lightning in a bottle. Maybe not as rare as it used to be in terms of “fame” with how everyone has social media now but still on the rare side. Sometimeswhatever goes viral is not even that great, or in this recipe case, delicious. In Jordan’s case, his recipe was delicious and he got the credit for it.

Several years have passed and, of course, people have taken their spin on his recipe, including me. Of course you can take this recipe and change it into what you want but the measurements I give here are perfect for me. Want it hotter? Add more hot sauce. Want it less hot? Add less hot sauce. Experiment and see what you think. If I remember right, there was also a complimentary video that went with his viral video of how to make your own tortilla chips. That would be nice but if you do not have the time, store bought is fine!

The Best Buffalo Chicken Dip

4 cups Rotisserie chicken, shredded

12 oz Ranch dressing

5 oz hot sauce

8 oz cream cheese

8 oz shredded sharp cheddar cheese

8 oz shredded Colby and Monterey Jack cheese

Start by spraying your slow cooker with non-stick cooking spray.

Combine all ingredients and place on lid. Cook over high for 4 hours, or low for 6 hours, removing the lid and stirring every hour or so.

When all ingredients are melted together, place on warm and serve warm.

Leftovers can be kept chilled in the refrigerator for up to 3 days.
