People write to me all the time and talk about how delicious all of my desserts are and how delicious all my comfort recipes are but also wonder if I could share some lighter options. I am always happy to share lighter options and lighter meals, snacks and desserts but honestly it just is not as fun to write about “healthy” food as it is comfort foods and desserts. However, I am trying to expand and with the help of some of my friends, I have a few lined up, including this one, that I am actually excited to share and taste test later on with my taste testers. 

The recipe here today is not only healthy but it is a “feel good food”. You will feel better and thank yourself after eating it. It is also keto friendly. For those who want to bring along some bread to eat along with this “sub in a tub” go ahead but it might be the best idea to find a bread that is whole wheat and high in fiber. This “recipe” is the perfect thing to prep for your lunch days at the office, a picnic with friends or just some time in the afternoon home alone.

This can be made ahead and refrigerated in separate containers to grab and go. 

Provolone cheese

Ham

Sliced onions

Shredded lettuce

Avocado

Banana peppers

Sliced Pickles

Sliced Tomato

Red wine vinegar

Chopped Oregano

Chopped Parsley 

In a medium sized container, layer tomatoes on the bottom and then build up with the ingredients by layers and sections. Be sure to season with salt and pepper each layer.

When at the top, drizzle with red wine vinegar and sprinkle with the chopped herbs.
