Strawberry White Chocolate Blondies
These blondies are some of my very favorites ever! I make these and literally people go crazy and I can never make enough! I love white chocolate and I love strawberries, so the idea of combining them into one dessert just simply would not leave my mind until eventually these happened! These are so easy to throw together and are soft and chewy at the same time. The white chocolate and the strawberry goes perfectly with one another. You could however, if you really are not a fan of white chocolate, throw in some chopped milk chocolate and see where that might take you. I will have to say though, that the white chocolate will be your better bet!
When making these, you can use literally whatever strawberry jam or jelly you would like. I have made these with homemade jam, store-bought jelly and everything in between. Be sure to take them out before you think they are baked. Watch and once they are golden brown, remove from the oven and allow them to continue baking with the heat that they will still have with them once they leave the oven. Strawberry White Chocolate Blondies
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 sticks unsalted butter, melted and slightly cooled
1 1/4 cups light brown sugar
2 large eggs
2 teaspoons vanilla extract
1 cup white chocolate chips or chunks
About 1/3 cup strawberry jam
Preheat oven to 350°F. Line an 8×8-inch pan with aluminum foil, leaving enough overhang on the sides for lifting the bars out of the pan after baking.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, place melted butter and brown sugar and whisk until well combined. Whisk in the egg and vanilla extract. Add flour mixture and fold, using a rubber spatula, just until combined. Do not over mix. Fold in chocolate chips/chunks.
Spread dough evenly into prepared pan and smooth the top. Dollop spoonfuls of the strawberry jam over the dough. With a knife or a skewer, gently swirl the two batters together, to get a marble effect.
Bake for 45-60 minutes until golden brown but still slightly jiggly in the middle.
Allow to cool to room temperature on a wire rack, then lift out the blondies of the pan and cut into squares. Serve warm or at room temperature.
Ask and Answer: I can not believe how many people I heard from with the recipe I shared here for “Bread Chocolate Chip Cookies”. It was hilarious! Yes, the recipe really works, it really does not taste that bad and no I have not thought about expanding upon the idea for more flavors. I also heard from several who could not believe it so they had to try it for themselves and they too really liked them and could not believe it. My website traffic was also up so people were pulling in from everywhere. Ha!
