Cracker Salad


Before you turn your nose up at the looks, thoughts or ingredient list of this recipe, let me reassure you that you will love it! It is basically just like eating the most flavorful tomato and boiled eggs on a cracker. This recipe is so popular down south, I remember Paula Deen having a whole episode about it. Some people call this tomato cracker salad, or sometimes even Georgia cracker salad, which I am pretty sure where it originated from. Whatever you call it, I call it delicious. Yes, I was a little unsure about it at first but after trying it and seeing for myself, I really changed my mind and thoughts about it. For those of you who are still wondering about it, let me put it this way… It reminds me of a summer’s fresh tomato and mayonnaise sandwich but even better because of the crunch of the crackers! 

You can add diced onion to this if you want and get as fancy with the serving and presentation of it as you would like. You can serve it in a bowl, you can serve it on lettuce leaves or you can simply serve it on little cocktail spoons. I have, I am ashamed to admit this, made the salad a little dryer by not adding as much mayonnaise and then making balls out of the mixture and then refrigerating them, only to fry them later… Yes, not my proudest moment or my most delicious recipe test but that is the truth and there it is. Feel free to add a little crab or chicken if you would like. Adding the meat takes it from a simple side dish to a quick and delicious meal. 

Cracker Salad

1 large tomato, diced
3 boiled eggs, diced
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup mayonnaise
1 sleeve saltine crackers, crumbled

In a large bowl combine the diced tomato, diced boiled eggs, garlic powder, onion powder, salt, and black pepper.

Add in the crumbled saltine crackers.

Dollop the mayonnaise on top. Stir the mayonnaise in only right before serving.

Serve immediately.
