These are my favorite brownies ever!
1 package dark chocolate chips
2 sticks unsalted butter, diced
1 teaspoon instant coffee granules
1 1/2 cups white granulated sugar
1/2 cup light brown sugar, packed
5 large eggs
2 teaspoons pure vanilla extract
1 1/4 cups white all-purpose flour
2 tablespoons unsweetened cocoa powder
1 teaspoon salt
Start by preheating your oven to 350 degrees F. Spray a 9×13-inch baking pan with non-stick spray containing flour.
In a large microwave safe bowl combine the dark chocolate chips with the diced unsalted butter and instant coffee granules. Microwave on high for 2 minutes, stirring every 30 seconds, until the mixture is smooth and glossy. Whisk in the white granulated sugar and packed light brown sugar. Leave to cool at room temperature.
Whisk in 3 large eggs, followed by the remaining 2 large eggs and pure vanilla extract. Do not over whisk the mixture.
Add in the white all-purpose flour, unsweetened cocoa powder and salt. Gently fold together until combined.
Pour batter into prepared pan and bake, in preheated oven, for 35 minutes. Remove and allow to cool before cutting. Enjoy!
