Chocolate Snack Cake Cupcakes
I have been trying to write and share more of a variety of recipes, opposed to my regular sugar and dessert favorite type of writing and sharing but today I am going back into the world of sugar. Why? Two reasons. I believe everything in moderation, including moderation of course, and two, I have been getting a few email requests about people wanting me to share some type of cupcake recipe that would be different than the typical run of the mill cupcakes that are frosted or decorated. I thought, what a perfect opportunity to share this recipe with everyone! This cupcake recipe is easy, it uses a boxed cake mix and a container of frosting but is deeply delicious because it is basically chocolate mayonniase cupcakes with the flavor turned up! You have to use the full cup of coffee in this recipe to really get the flavor you are looking for. It will not taste like coffee however! Trust me. The addition of the coffee makes the chocolate taste stronger, better and “clearer” if that makes sense to anyone. This is one of my secrets!
People will never guess this is a boxed mix, or a container of frosting for that matter because with the addition of the mayonnaise and the coffee, they will taste homemade! If you have never had a mayonnaise cake, or cupcakes, before you are really missing out! I highly recommend making one if you already have not. There is not a, I hate to use the word moist here but there is not a moister cake known to man. They are simply fabulous! You can use either Ho-Ho’s or Swiss Rolls for this, but I have found that when you cut the Swiss Rolls into sections, the chocolate does not tear as easy and makes for a better presentation. I would like to mention that Ho-Ho’s are the trademark of Hostess Brands LLC, while Swiss Rolls are the trademark of Little Debbie Brand, also marketed by McKee Foods Brands.
Chocolate Snack Cake Cupcakes
You can make your cake and frosting from scratch with this recipe, but I have found that homemade mayonnaise cakes just do not hold up as well when made into cupcakes, rather than an entire cake. The frosting I use for this recipe is labeled as chocolate fudge. I put a thin layer on top, just enough to hold the Swiss Roll pieces on top without them falling off. For a super decadent treat, you could fill these cupcakes with buttercream frosting.
1 box Devil’s Food cake mix
1 cup mayonnaise
1 cup coffee
3 large eggs
1 container chocolate fudge frosting
12 Swiss Rolls, diced into fourths
Start by preheating your oven to 350 degrees F.
Line a 24-cup capacity cupcake tin with paper cups.
In a large bowl, whisk together the cake mix, mayonniase, coffee and large eggs.
Divide the batter evenly in the prepared cupcake tins.
Bake, in preheated oven, for 24 minutes.
Allow to cool completely at room temperature before frosting with a thin coat of frosting.
Place the diced Swiss Rolls on the tops of each cupcake.
Serve and enjoy!
Ask and Answer: I had been getting a few questions about my column and recipe for my magic crust apple pie, so I thought I would answer a couple of your questions here. Jenny K. from Shelbyville wrote in and wondered if the recipe could be made into individual pies using a muffin or cupcake tin. The idea sounds fabulous, however that particular recipe would not work in that situation. There was also a question from an anonymous person in New Castle who wondered if the magic crust apple pie recipe would work with other fillings and the answer to that is yes! I believe I answered that question but wanted to address it again. You could literally use any type of pie filling you like,and the recipe will turn out perfect each and every time!
