A New and Different Butterscotch Snack

Blaise Doubman

Growing up, I was not the biggest butterscotch fan. For some reason, I always thought butterscotch tasted like a weaker version of caramel. After my taste buds grew and developed, I learned that I actually love butterscotch! Of course, since I love butterscotch so much, I have been testing recipes that, you guessed it, involve butterscotch in one form or another. Which leads me to the recipe I am sharing with all of you today. Butterscotch Treats are exactly the familiar recipe that you remember making and eating growing up but with the volume turned way up! Just a simple small box of instant butterscotch pudding mix transforms these treats into something so addictively delicious that you will not believe it! And, ready for some good news? If you do not like butterscotch, substitute the instant butterscotch pudding mix for any flavor you want! Chocolate, vanilla, caramel, lemon, any of those will work here.

If you visit my website and type, “butterscotch” into the search engine, you will find a few butterscotch recipes that are just incredible. So, if you like these, may I suggest that you try my Butterscotch Crunch Bars? They are basically a butterscotch and peanut butter mixture poured over crushed wafer cereal and topped with melted chocolate. Oh, and can I talk to you about how delicious butterscotch and peanut butter are together? Yum! Sometimes, when I make my buckeye candy, I will melt a combination of both butterscotch and semi-sweet chocolate together to dip the peanut butter candy. Mouthwatering! Also, on my website, you will find Scotcheroos Krispie Treats, which are sort of like the Crunch Bars, but different bases and you will also find my favorite Butterscotch Fudge recipe! You will also find a butterscotch cookie recipe dedicated to my dear friend Carol Gregory. If you are reading this and have a favorite butterscotch recipe that you would like to share with me, please send me a message through the contact page on my website. I would love to see the recipe, try it and hear from you!

Butterscotch Treats

These are best if eaten the same day they are made.

1 stick unsalted butter
10 oz mini marshmallows
Small packet instant butterscotch pudding mix
6 cups crispy rice cereal

Start by lining a 9-inch square baking pan with aluminum foil and lightly spray with non-stick cooking spray.

In a large pot over medium high heat, melt the butter.

Add in the mini marshmallows and small packet of instant butterscotch pudding mix.

Stir until melted and smooth.

Stir in the crispy rice cereal and coat well.

Pour mixture into prepared pan and press down evenly, smoothing out the top.

Allow to sit at room temperature for about 30 minutes before removing and cutting.

Ask and Answer: I have been getting a lot of questions about if my baked goods are available to purchase and / or ship. Unfortunately, they currently are not. If that changes, I will be sure to make some type of announcement on my website. Thank you though for your interest.
