A Delicious Spin on Chicken Salad

I love chicken salad! But this one really has the volume turned up because it uses Nelson’s barbecue chicken. You can use a little bit of the skin so that you can also have the flavor, taste and spice of the chicken. You can also experiment and use whatever you would like in the salad such as Craisin‘s, pecans, walnuts or even parsley. This is so simple and delicious, you simply will not believe it.

Nelson’s BBQ Chicken Salad

If Nelson’s BBQ chicken is not available to you, try and find a BBQ flavored rotisserie chicken.

6-8 cups Nelson’s BBQ chicken, pulled apart, diced fine, leaving some of the skin on

4 stalks celery, finely diced, tops removed

2 bunches scallions, finely diced, green tops discarded

4 boiled eggs, finely diced 

1 cup mayonnaise

1 cup Miracle Whip

1 teaspoon salt

1 teaspoon black pepper

1/2 teaspoon garlic salt

Combine all ingredients into a large bowl and taste for seasonings.

Cover and chill. Serve after chilling overnight.
