Chocolate Chunk Cookies

I must have a hundred chocolate chip cookie recipes! Matter of fact, I almost published a cookbook of just chocolate chip cookie recipes. Anyways, I am always on the hunt for something new and different. These are your basic chocolate chip cookie but made with butter, for flavor and vegetable shortening, for texture. Plus they have huge semi-sweet chocolate chunks packed inside! To be different, add dark and milk chocolates to these cookies for a triple delicious cookie, sure to please!
It is important to chill the dough with these cookies because it allows the dough to marry in flavor and textures with one another. It also helps the cookies maintain their texture. You can also freeze this dough for up to 6 months! That way, whenever you want fresh chocolate chip cookies, take them from the freezer and bake them off fresh! What a delicious idea.
Chocolate Chunk Cookies
Chill this dough overnight for spectacular flavor!
1 stick unsalted butter, soft
½ cup solid vegetable shortening
¾ cup light brown sugar, packed
¾ cup white granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
1 teaspoon baking soda
1 teaspoon salt
2 ¼ cups white all-purpose flour
2 cups semi-sweet chocolate chunks
In a large bowl, combine the soft unsalted butter with the sold vegetable shortening, packed light brown sugar and white granulated sugar until light and fluffy.
Beat in the large eggs, pure vanilla extract, baking soda and salt.
Once combined, add in the white all-purpose flour. Fold in the semi-sweet chocolate chunks.
Place into the refrigerator to chill overnight.
When ready to bake, preheat your oven to 350 degrees F. Line 2 large baking sheets with parchment paper. Dollop out ¼ cup balls onto the prepared baking sheets, leaving about 2-inches between each ball.
Bake, one baking sheet at a time, in preheated oven for 18 minutes. Remove and cool.
