Glazed Oatmeal Cookies

I mentioned “boneless cookies” in my column awhile back and yes, the trend is still going strong on TikTok. A “boneless cookie” essentially means a cookie that is super soft and chewy. When TikTok creators post videos of these cookies they usually show them breaking the cookie in half up close to the camera, to prove to the viewers that they are in fact “boneless” or slang I guess you could call it for “super soft”. I like my cookies all ways. I like them crispy, chewy, soft, crunchy and just about everything else in between. I have always like all types of cookies and for those who may be new readers, I was super close to creating another cookbook a few years ago but at the time it was going to be nothing but cookies.

My website has so many different cookie recipes, especially chocolate chip, that sometimes I get a little embarrassed by the amount. Which was something else I thought about doing in my cookbook world, was creating a cookbook of all chocolate chip cookie recipes. Yes, I have that many. If you do not believe me, just get on my website and find the search engine and type in “chocolate chip cookies” and see for yourself! What type of cookie is your favorite? Do you like cookies crispy, crunchy, soft or tender? The recipe I am sharing today produces those old-fashioned cookies that you may remember from your childhood. They are full of flavor and really delicious. The glaze on the top just adds that little something special. Enjoy! 

Glazed Oatmeal Cookies

These can be made ahead and stored at room temperate in an airtight container.

For the cookies…

2 1/2 sticks unsalted butter, soft

3/4 cup light brown sugar, firmly packed

1/2 cup white granulated sugar

1 large egg

2 teaspoons pure vanilla extract

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon salt

2 1/2 cups white all-purpose flour

3 cups quick cooking oats 

For the glaze…

2 cups powdered sugar

4 tablespoons milk

Start by preheating your oven to 375 degrees F.

Line a large baking sheet with parchment paper. 

In a large bowl cream together the soft unsalted butter with the firmly packed light brown sugar and white granulated sugar until light in color and fluffy in texture. 

Beat in the large egg and pure vanilla extract.

Beat in the baking soda, ground cinnamon and salt.

Fold in the white all-purpose flour.

Fold in the quick cooking oats.

Drop dough by tablespoon size onto prepared baking sheet and bake, in preheated oven, for 12 minutes. 

Remove and allow to cool.

Make the glaze by whisking together the powdered sugar and milk.

Dip cooled cookies into the glaze, top size down, remove and place onto parchment paper.

Allow to set up and then enjoy.
