If you are not familiar with the online form, Reddit, I highly recommend you join in on the fun. There are so many fun and interesting topics floating around, including recipes and discussions like this one, that I promise a person will learn something within the first five minutes of logging on! It took me a little bit to get the hang of things but once I did, that was it! I was off.

My first Reddit conversation was with a cake group somewhere out west. About once a month they would gather all of the work friends, this lady worked in a library, and they would have a themed dessert pitch-in. Sounds like Heaven does it not? One month would be cookies, the next pies, candies, breads and cakes. She told me all about some of her favorite and least favorite desserts. All of them homemade and made by each staff member. When we got onto the month and subject of “cakes” she said she wanted to give me the recipe for her chocolate cake that was really something that had found its way into her hands because the recipe was over 80 years old. The recipe, like most older recipes, had no real detailed instructions including mixing order of ingredients, oven temperature instructions or anything. She tinkered with this recipe for a bit before finally coming up with the recipe I am sharing with you here today. Still delicious even after over 80 years! I, personally, am in love with this cake! 

Reddit Chocolate Cake 

2 cups white all-purpose flour
2 cups white granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup vegetable oil
1 cup brewed black coffee
1 cup whole milk
2 large eggs
2 teaspoons pure vanilla extract

Start by preheating your oven to 375 degrees F. Spray a Bundt pan with non-stick cooking spray containing flour.

In a large bowl whisk together the white all-purpose flour, white granulated sugar, unsweetened cocoa powder, baking powder, baking soda and salt until combined together and lump free.

In another large bowl whisk together the vegetable oil, brewed black coffee, whole milk, large eggs and pure vanilla extract.

Slowly add the wet ingredients into the dry ingredients, folding to combine everything together. Using a whisk, whisk for a couple of minutes until smooth and lump free.

Pour the batter into the prepared pan and bake in preheated oven for 40-45 minutes.

Remove and allow to cool 10 minutes before carefully unmolding onto a plate.

Cool completely.

Serve as is or make a glaze for the top by melting together 1/2 cup semi-sweet chocolate chips, 2 tablespoons butter and 1 tablespoon light corn syrup in a microwave safe bowl, on high powder for 45 seconds, stirring until smooth and glossy. Stir in 1 teaspoon pure vanilla extract. Carefully pour the glaze over the top of the cake.
