Has anyone else noticed that their favorite products are changing their “looks” at the grocery stores? And not only are some of your favorite products undergoing a “makeover” of sorts, they are bringing back the packages smaller and with more mark up! That is simply not right. You know as well as I do, that these companies are not hurting for money so bad that they have to gouge their loyal customers! I had heard about it on the news but really got to experience it myself within the last few months. Higher prices and less and less product.
Perfect example? Cake mixes! Cake mixes have shrunken all across the board. Different brands now have different ounces and if you are not careful, older recipes based off the older sizes, will mess up your recipes. The recipe I am sharing today takes the guess work out of how big, or small, your box of cake mix has to be when trying to make cake mix cookies. This recipe is simple. Start with a cake mix and add flour, eggs, vegetable oil and some pure vanilla extract. If you are a believe of conspiracy theories, you may or may believe that this very recipe is also used at a popular cookie place. You know which one I am talking about? The store that starts with a “C”, has a pink box and is starting to expand and offer things other than cookies? It is said they use a cake mix for their cookies. Try these and see what you think. Cake Mix Cookies Remixed
1 box chocolate cake mix
1/4 cup white all-purpose flour
2 large eggs
1/2 cup vegetable oil
1 tablespoon pure vanilla extract
1/2 cup powdered sugar
Start by preheating your oven to 350 degrees F. Line 2 large baking sheets with parchment paper.
In a large bowl combine the chocolate cake mix with the white all-purpose flour, large eggs, vegetable oil and pure vanilla extract.
Roll tablespoon size balls of dough into the powdered sugar and place evenly between the 2 prepared baking sheets.
Bake, one sheet at a time, in preheated oven for 12 minutes.
Remove, cool and enjoy!
