Chocolate Chip Banana Bread Cookies

I love coming up with new cookie recipes that are not only simple but delicious! The recipe I am sharing here today fits both of the categories and then some. I do not know about you but I usually always have either one or a few bananas sitting around the house that have well passed their prime. One minute the bananas are fine, turn your back and then the next minute, they are almost black. This recipe is perfect to use for those exact moments because the recipe only calls for one single banana.
These cookies are super soft and taste just like banana bread but in cookie form. The addition of the chocolate chips and or nuts for that matter, is entirely up to you. I love my banana bread to be heavily studded with both chocolate chips and walnuts, therefore I like the same in my banana bread cookies but if you are more of a purest, simply leave them out. I love these right from the oven but they are just as good cold the next day.
Chocolate Chip Banana Bread Cookies
This recipe can be easily doubled, tripled or more.
1 ripe banana
1/2 cup white granulated sugar
4 tablespoons unsalted butter, melted
1 cup white all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup chocolate chips, pecans, walnuts, optional
Start by preheating your oven to 350 degrees F and line a large baking sheet with parchment paper.
Cream together the mashed banana, white granulated sugar and melted butter in a medium sized bowl until smooth and creamy.
Add in the white all-purpose flour, salt and baking soda and stir until the last bit of white disappears.
Add in desired mix-ins, optional and stir lightly to combine.
Drop tablespoon size balls of dough onto the prepared baking sheet. Bake, in preheated oven, for 10 minutes.
Remove, cool and enjoy!
