Ultimate Rice Krispie Treats
For whatever reason, I have always had an obsession with Rice Krispie Treats, or RKT’s as the diehards call them. I am not really sure why. I think it was because, and still is, for several reasons. One, they can be stirred up from start to eating in under 10 minutes. I also think it is the fact that the recipe is so versatile. You can make these treats with literally any type of cereal you want and trust me, I have! Cocoa rice cereal, peanut butter circle cereal, O-shaped cereal and on and on. I have even done combinations of several different types of cereal and each and every one of them have turned out just fabulous.
I am calling these my “Ultimate” because these are just that. Skip this recipe and head to the recipe on the cereal box if you want something familiar. This recipe takes that old back of the box recipe and turns up the volume. What is the secret? The main secret is a small box of instant vanilla pudding mix! What? Yep, that is the secret and let me tell you it is delicious! The pudding creates not only a special taste but it gives these bars a certain texture you would not be able to get otherwise. I highly recommend you try these! And, my rule of thumb, or hands, here is that these must be eaten messily with clean hands. Enjoy!
Ultimate Rice Krispie Treats
1 stick unsalted butter
2 bags marshmallows
1 small box instant vanilla pudding mix
Pinch of salt
6 cups Rice Krispie cereal
Start by lining a 9-inch square pan with aluminum foil and lightly spray with non-stick cooking spray.
In a large pot over medium high heat, melt the unsalted butter. Add in 1 bag of marshmallows and stir until melted.
Add in the small box of instant vanilla pudding mix and stir together.
Stir in the pinch of salt.
Add in the Rice Krispie cereal and stir. Add in the remaining bag of marshmallows. Stir lightly until everything is combined.
Pour into the prepared pan. Lightly press down to smooth out the top.
Allow to sit for about an hour.
Remove, cut and serve.
Ask and Answer: I have been getting a few questions about the “newest trend” of mixing cake mix and soda, baking and creating a nice and soft, tender crumb, cake. Is it true? Yes, it very much is true. The only thing is, do not use Diet Soda. It will not work. The final outcome with the regular soda and cake mix is ok but I would not say it is the most flavorful cake in the world. It is a nice trick to have up your sleeve thought when in a pinch.
