Creamy Onion Dip

Yes, I know this is not much of a “recipe” but I really wanted to share it with everyone, especially since the hotter months are coming up and it is the perfect side dish to have with your potato chips when everyone starts getting their grills out and ready. There is technically only 3 ingredients to this but you could always add a little black pepper and a splash or two of hot sauce, which I have been known to do on occasion. Instantly, as soon as I start eating this, it takes me back to my childhood. Out by the pool with my Grandpa Max and Grandma Deloris and some of my cousins, to my parents house during one of their cookouts or to my Grandma Barbra’s and Grandpa Junior’s. This, to me, is almost like a comfort food.

We lost my Grandpa Junior almost a month ago now. I can not believe he is gone. I still keep wanting to call him and check up on him. I forget sometimes he is gone and pick up the phone, or start walking to his house. I thought he was going to live forever. I mean, he was almost 90 after all. I have started a “in memory” column for him several times and just can not get myself to finish it. Loosing my last Grandparent was harder than I thought. All of my other Grandparents had passed but he was managing to hold on. It feels weird not to have any Grandparents but I am thankful I have been able to have the memories and years with them that I have had. Some people do not even know or get to meet their Grandparents. I will forever miss mine.
