CHEW THIS! Favorite Chocolate Cookies

My New Favorite Chocolate Cookies

During the quarantine I have been sorting and organizing my cookbooks and recipe cards. You would not believe the recipes I have in my folder labeled “favorite recipes”! Ha! I decided to sort of “weed out” and go through some of my favorite recipes and I discovered that some of my favorite recipes are not necessarily my “favorites” anymore. I also discovered that I have a lot of recipes that I needed to add. Throughout the years some recipes are simply timeless. The timeless recipes are the recipes that my Grandma Barbra or Grandma Deloris would make. Lots of my timeless recipes in my collection are also recipes that my Mom, Darla, still makes. But other recipes are things that I no longer really find to be a “favorite” in one way or another. Perhaps I have found a better recipe or improved upon it in some way or maybe just decided the recipe was too fussy. Do you find yourself in the same boat as I am? Loving a recipe for a while, then tossing it aside? I feel guilty doing this, but I must remember that not everything can be a “favorite”. Things change and so do recipes, ways of preparing and serving food, as well as taste buds and food trends. At the same time, that is what makes the food world so exciting. Just the addition or subtraction of a single ingredient can make all the difference.

Skip ahead to a few weeks of intense recipe testing and let me present to you my new favorite chocolate cookies! I have always loved chocolate chip cookies, even more so lately and I blame that on stress eating, but these have a unique flavor all their own. Imagine a chocolate chip cookie where the actual cookie is chocolate, filled with chocolate chips and under baked slightly to almost resemble a brownie in cookie form. Do I have your attention yet? Where are my fellow chocoholics at? These are scrumptious! Do not panic when you stir these up and think that the batter is too thin! The batter is supposed to be on the thin side. This recipe works, trust me! Those that know me and have followed me for years know that I test each and every recipe that I share either here in my column, in my cookbooks or on my website several times before finalizing and sharing. These are fabulously delicious with a tall cold glass of milk! Stir these up soon and I promise you they will quickly become your new favorite chocolate cookie!

Favorite Chocolate Cookies

These cookies need to be under baked slightly to achieve their desired flavor and texture. Store any leftover cookies, tightly covered, at room temperature for 24 hours. These can be microwaved for 7 seconds to turn even gooier. You need a total of 3 cups semi-sweet chocolate chips for this recipe. Semi-sweet variety really works the best.

1 cup semi-sweet chocolate chips
4 tablespoons unsalted butter
2/3 cup white all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
2 large eggs
¾ cup light brown sugar, packed
1 tablespoon pure vanilla extract
1 teaspoon instant coffee granules
2 cups semi-sweet chocolate chips

Start by preheating your oven to 350 degrees F. Line 2 large baking sheets with parchment paper.

In a medium sized microwave safe bowl, combine the 1 cup semi-sweet chocolate chips with the unsalted butter. Microwave on high for 2 minutes, stirring every 30 seconds, until melted and smooth and glossy when stirred. Be careful not to scorch the chocolate.

In another medium sized bowl, combine the large eggs, packed brown sugar, pure vanilla extract and instant coffee granules. Beat together well until light in color and fluffy in texture.

Beat in the melted chocolate. Add in the white all-purpose flour, baking powder and salt, all at once and gently fold until no more white streaks can be seen in the batter.

Gently fold in the 2 cups semi-sweet chocolate chips.

Drop tablespoon size amounts of dough onto the prepared baking sheets, about 2 inches apart, and bake in preheated oven for 14 minutes, one baking sheet at a time.

Once baked, allow the cookies to cool on their baking sheets before enjoying.
