I have loved Dolly Parton since I was about 7 years old. I was first introduced to her by my Grandma Barbra. The way she was introduced to me was by the song Bargain Store. Which has recently become popular again because of the use of it in the show Stranger Things. Anyways, they say that Dolly is the hardest working woman in show business and I find that to be true. Just Google all what she did during the pandemic in 2020! She has fans of all ages and all across the World and that to me is what a celebrity is. Someone who is not only talented but can use the spotlight shining on them for good and to help other people along the way.

Dolly Parton’s birthday is January 19th and she will turn 77. I thought, what a better way to honor her than to dedicate a column to her. This is her infamous Rice Krispie birthday cake! I am telling you, once you try a piece of this sweet dessert, you will agree that not only does it taste like birthday cake but it also just screams Dolly! It is rainbow, it is big, flavorful, loud and different. I highly recommend you try this. Be sure to use Dolly’s brand of buttercream frosting!

Dolly Parton’s Rice Krispie Treats

1 bag regular size marshmallows

6 tablespoons unsalted butter

2 teaspoons pure vanilla extract 

½ teaspoon salt

6 cups Rice Krispie cereal 

2 cups mini size marshmallows

Dolly Parton’s creamy buttercream frosting

Rainbow sprinkles

Start by spraying a 9×13-inch baking pan with non-stick cooking spray.

Over medium heat in a medium size pot, melt together the regular size marshmallows and the unsalted butter. Once melted, add in the pure vanilla extract and salt. Stir together well.

Once melted and combined, add in the cereal. Turn off the heat. Stir in the mini size marshmallows but do not allow them to melt. Immediately place the mixture into the prepared pan. Press down lightly to fill the pan but do not press too hard or the treats will turn tough.

Allow to cool completely before frosting with Dolly’s creamy buttercream frosting.

Decorate the top with sprinkles.
