White Chocolate Holiday Cookies
Blaise Doubman
It is almost Christmas! I hope everyone is ready. It will be here whether we are ready or not. If you need any type of last minute dessert, last minute gift or last minute snack then I have the recipe for you! These cookies take three ingredients and could not be any more simple! Plus, you can experiment and turn the insides of these cookies into anything you think you might like! Peanut butter is delicious but that is only the tip of the iceberg! Why not peanut butter and jelly? Why not peanut butter and a slice of banana? How does forgoing the peanut butter all together sound and how about stuffing these with chocolate chip cookie dough!? Delicious!
However you decide to make these, be sure to spread them around and offer others joy this Holiday season! I would like to take a moment and thank all of my readers both here in the newspaper and online through The Courier-Times website and my own website and say thank you. Without your dedication and support, I could not continue to do this and I love doing this. I love sharing recipes with you all and hearing your feedback. I have been on this food and recipe journey for nearly 10 years and it has been one of the great joys of my life. I love sharing and talking about memories and good food. So, thank you all. You reading these words right now mean everything to me. I wish you all a happy and healthy Christmas and a peaceful and wonderful New Year! I hope to see you all right back here doing what we do, in 2024!
White Chocolate Holiday Cookies
Leftovers can be kept at room temperature for up to a week.
40 Ritz crackers
1/2 cup smooth peanut butter
2 packages white almond bark
White sprinkles, optional
Start by lining a large baking sheet with parchment paper.
Take the crackers and make peanut butter sandwiches out of them, using all of the crackers and all of the peanut butter. You should have 20 peanut butter cracker sandwiches when you are done. If you do not, that means you either have someone with a sneaky hand, or it is you!
Melt the white almond bark according to package directions.
Dip the sandwiches into the melted almond bark and place back onto the baking sheet.
Once done, sprinkle with white sprinkles.
Allow to sit and the white almond bark to firm up before sharing and enjoying.
Ask and Answer: In case you missed it. I have to issue an apology to those who have written into me about my Oatmeal Cookies that I featured here in my column. The 2 1/2 cups white all-purpose flour did not seem to make the final recipe. The flour plays an important role in these cookies and I apologize for the written error of leaving it out. The recipe has been corrected on my website.
