The Best Peanut Butter Frosting 

Ok I am a huge fan of frosting! There used to be an Indianapolis cupcake shop called “Gigi’s Cupcakes”, which is no longer in Indiana I do not believe, that had the best ratio, for me, of cupcake to frosting. It was known as their “Gigi’s Swirl” and it was 4 giant layers of decorated frosting on each cupcake. So good! I recently did a poll on my Facebook page, asking people their preferred ratio of cake to frosting and the results really surprised me! The picture on the poll was four cupcakes. Cupcake A had about a dollop of frosting on top. Just enough to cover the top and then a little tiny bit extra. Cupcake B had 2 dollops. Cupcake C had three dollops and the frosting to cupcake ratio here was about even. Then there was my personal favorite, or Cupcake D. Cupcake D had 4-5 dollops and stood over half of the frosting to cake ratio. You would not believe the people who picked either A or B! Honestly, I was totally blown away. I thought people would have went with the most frosting but that is not really true, as I found out first hand! 

The recipe I am sharing here today is about buttercream frosting but turned up a notch with peanut butter! This peanut butter buttercream is the best buttercream I think I have ever had! It is so good and so creamy that you will not believe it. Be sure when mixing it all together in the final stages, not to over whip it or you will start having peanut butter cup stiff filling and not the creamy and silky buttercream frosting we are going for here. This is delicious on chocolate cupcakes! 

Peanut Butter Buttercream Frosting

2 sticks unsalted butter, soft
1 cup creamy peanut butter
3 cups powdered sugar
3 tablespoons whole milk
1 tablespoon pure vanilla extract
1/2 teaspoon salt

Start by combining the softened unsalted butter and the creamy peanut butter. Stir together until combined and smooth.

Add the powdered sugar a little at a time.

Add in the whole milk and beat well.

Add in the pure vanilla extract and salt.

Beat for a few minutes until light and fluffy.
